- The PERSON IN CHARGE of a FOOD ESTABLISHMENT shall RESTRICT any FOOD EMPLOYEE who is known to have:(1) A lesion that appears inflamed or contains pus and that is not covered;(2) Exposure to foodborne pathogens as described in WAC 246-215-02205 (2)(b) through (e) and works in a FOOD ESTABLISHMENT serving a HIGHLY SUSCEPTIBLE POPULATION; or(3) A sore throat with fever.
